Coming to Mississippi this Autumn.

Our world-renowned chefs, John Folse and Rick Tramonto, are passionate about Gulf seafood. And we’re positively elated at the prospect of sharing that passion by putting their spin on a cuisine you already know and love. In the process, we hope to contribute to the preservation of Mississippi’s Gulf seafood heritage.


Why Mississippi? We’ve lost track of how many times we’ve been asked this question, which is usually followed by, “Why not New York?” or, “Why not L.A.?” To better answer the question of why we’re here, perhaps it’s helpful to tell why we’re not:

We’re not here to “R’evolutionize” Mississippi.

We’re here to let Mississippi R’evolutionize us.

From the chairs you sit in to the beams on the ceiling, from the art on the walls to the boiling room, every single thing you see and touch in our restaurant is inspired by the things that are beautiful about Mississippi’s culture—both past and present. We hope to make Seafood R’evolution a small part of what makes Mississippi beautiful in the future.
